Skillet burgers with secret spicy sauce

Burgers for lunch or dinner are always a good idea. I didn’t grill with this recipe, but I did get that wonderfully charred exterior with a nice medium interior, and I did it all indoors using my trusty cast iron skillet! Seriously, if you don’t have one of those you NEED to get one. The cooking time (once the oil in the pan is smoking hot) is only 1.5 minutes per side. That’s right. In just three minutes you can have your own juicy burger.

If you’re nervous about overcooking your burgers, you can throw your patties on some wax paper (or parchment paper) and stick them in the freezer for a few minutes prior to cooking. That way the interior will cook slower while the exterior gets that nice, crusty outer layer that burgers get on the grill. Once I flip the burgers over, I place the cheese on top and toss an ice cube into the pan and cover it. That helps the cheese melt and become all gooey and delicious without overcooking your burger during that final minute.

Yield: 5-6 (maybe more depending on size of burgers and buns)

Ingredients

    For the burgers:
  • 1.5 lbs ground beef
  • 1 TBSP Worcestershire sauce
  • 1/2 TBSP onion powder
  • salt and pepper
  • For the secret spicy sauce:
  • 1/2 TBSP garlic powder
  • 1/2 TBSP onion powder
  • 1 TBSP yellow mustard
  • 2 TBSP ketchup
  • 1 TBSP (or 5 slices of) pickled jalapeños, minced
  • 1 dill pickle, minced (or 4 TBSP of dill relish)
  • 1/2 cup mayo
  • 1/2 TBSP dried dill
  • 1/2 tsp cayenne pepper (or chipotle pepper)
  • For the buns:
  • butter
  • buns (of your choice)
  • For the toppings:
  • Tomato
  • Red onion
  • Shredded mozzarella (or cheese of your choice)
  • Lettuce (your choice, romaine is pictured)
  • Pickles

Instructions

  1. Mix all the ingredients for your sauce together in a bowl, and set aside.
  2. Add ground beef to another bowl and season with Worcestershire, onion powder, salt and pepper. Using gloves (or your bare hands) mix until well blended and form patties. I make mine slightly bigger than the bun (because they cook down) and keep them around 1/2 an inch thick, then place my patties on parchment paper and set aside until ready to cook.
  3. In a large pan add some oil and tater tots, and cook over medium heat until crispy.
  4. Prep your toppings and set aside.
  5. In the skillet you're using for the burgers, add some butter and toast the buns, setting aside once they're all done.
  6. Add some oil to the skillet and wait until it's smoking before adding your first hamburger.
  7. Cook burgers 1.5 - 2 minutes per side. Adding cheese to the cooked side and covering with a lid until melted. Repeat until all the burgers are cooked.
  8. Sprinkle the tots with onion powder, salt and dill when they come out of the pan, toss so evenly coated and serve with burgers.
