Normally, I’m all about making my own dough from scratch. That’s the way my grandma and aunt did it, and there’s really no comparison to eating homemade, especially since it’s one of the easiest things to make. But there’s also this part of me that enjoys making dinner in less than thirty minutes some nights. And the only way that’s happening is if I buy some pre-made dough, y’all.

Believe me, I’ve already prayed for my ancestors forgiveness, and I’m preeeeeetty sure they’d forgive me after the first bite. My Sicilian family has also given their approval of the Boboli crust (and I’m always down for my Udi’s gluten free pizza crust), so that just leaves the fixings…

I enjoy dressing my pre-made dough up with some easy herbed ricotta cheese spread, fresh heirloom tomatoes, basil, and shredded mozzarella. A tomato tip: I love adding yellow tomatoes along with the red for this white pie. The yellow tomatoes have a slightly less acidic bite to them and taste great with the smooth, rich and creamy ricotta cheese.

For this recipe I used both gluten free ingredients and non-gluten free for everyone who doesn’t have to worry about gluten. It yielded four pizzas total: 1 package of Udi’s gluten free pizza crusts (2 crusts per package), and 2 Boboli pizza crusts.

Here’s what you’ll need for your 30 minute pizza delivery:

Prep Time: 10 minutes

Cook Time: 15 minutes

Yield: Makes 4 pizzas

Ingredients

    For the herbed ricotta cheese:
  • 2 chives (or green onions), finely cut
  • 1 TBSP fresh basil, chopped
  • 1 TBSP dried basil
  • 1/2 tsp dried oregano
  • 1 tsp dried parsley (or fresh!)
  • 2 TBSP pecorino romano cheese, grated
  • 32 oz part skim milk ricotta cheese
  • For the toppings:
  • 2 yellow heirloom tomatoes
  • 2 red heirloom tomatoes
  • 1 handfull of fresh basil
  • 4 cups of shredded mozzarella cheese
  • 2 Boboli pizza crusts
  • 2 Udi's gf pizza crusts

Instructions

  1. Combine all ingredients for the ricotta spread in a bowl, set aside.
  2. Cut tomatoes into 1/4 inch slices.
  3. Set oven to temperature specified on your dough package.
  4. Spread herbed ricotta cheese on pizza crusts.
  5. Add tomatoes to pizzas, lay them next to each other.
  6. Salt and pepper the tomatoes.
  7. Add fresh basil to top, cover with cheese and bake according to directions on Boboli and Udi's pizza crusts for 10 minutes or so.
  8. Serve with your favorite salad!
