Spinach and goat cheese puree

I’ve been on this SERIOUS workout routine for the last several weeks, and have been so impressed by the changes and differences I’ve seen in both my body and day-to-day life. Now, to be clear, I’m always eating fresh food that I cook for myself. But I’m talking about really, really getting into the nitty/gritty of living a healthy lifestyle every day. I wake up and have warm lemon water, followed by a protein-rich smoothie, and workout all throughout the day instead of just in an hour clump in the morning or at night.

Each time I take a writing break I do a set of 25 upper or lower abs, or squats, or lunges, or arm workouts–typically rotating throughout the day. My heart rate jumps up, my brain gets oxygenated, and I FEEL so good. And my creativity? It’s been phenomenal. This isn’t to brag, only to encourage anyone else who might feel overwhelmed by scheduling ONE MORE THING in an already jam-packed day–making small changes throughout the day equals BIG differences in your life.

To say I’ve been productive while writing my new book would be a massive understatement. Just implementing these little changes – along with cutting out excess soy products and substituting almond milk instead – has made such a difference in my energy and well-being. I’ve also been really into making fast meals at night, so I can go for walks after dinner while it’s still light out. The fall is here and I am SO EXCITED. Really, there is no better time to fall in love with life and every single aspect of it.

All that to say…I made the most delicious spinach puree the other night and topped it off with a seared steak and an herbed white wine sauce. It was dairy-free, gluten free, protein forward, and ready in under 25 minutes. It tasted like a savory, fall delight, and made me feel really energized after eating. Maybe because I saved all that cooking time 🙂

Here’s what you’ll need to make your spinach and goat cheese puree tonight:

Spinach and Goat Cheese Puree

Ingredients

  • 1 bag chopped frozen spinach
  • 3 cloves garlic, chopped
  • 3 potatoes, peeled and chopped
  • 2.5 TBSP soy-free butter (or butter if you don't have an allergy)
  • 3 TBSP goat cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup tofu sour cream (or sour cream if you don't have an allergy)
  • 1/4 cup chicken broth
  • salt to taste

Instructions

  1. Cut potatoes and bring to a boil in salted water.
  2. In a large skillet sauté frozen spinach with a little olive oil until it softens.
  3. Add garlic and sauté until fragrant.
  4. Add garlic and onion powder, soy free butter, goat cheese, tofu sour cream and chicken broth.
  5. Mix until well blended, then add potatoes and mash.
  6. Combine everything in a food processor and pulse until smooth. Add salt to taste and serve with your favorite choice of meat or veggie entree.
