Pasta is a MAJOR staple in most Italian-American homes. Like I’m talking about eating it five out of seven nights a week and always, always with Sunday dinner.

It’s fast. It’s versatile. And let’s be honest, it’s awesome comfort food.

When I first went gluten free there were very few options for GF pasta out there. It was like my life flashed before my cat-lined eyes. How was a girl from a Sicilian household to survive without pasta?!!!

What a difference a few years makes.

Now I can get gluten free pasta in any grocery store, and the blends are so close to regular wheat-based pasta that I can hardly tell the difference anymore. God is good, y’all.

One of the best things about making pasta the star of your meal is how quickly it can all come together, and you can use anything you’ve got in the fridge. A favorite of mine is hot Italian sausage with green peas and white wine sauce.

Here’s what you’ll need:

Gluten free Penne with hot Italian sausage and white wine sauce

Cook Time: 20 minutes

Gluten free Penne with hot Italian sausage and white wine sauce

Ingredients

    For the pasta:
  • 1 box gluten free penne
  • 1 teaspoon salt
  • For the sauce:
  • 1 package of hot Italian sausage
  • 1/2 cup white wine
  • 2 cloves garlic, minced
  • 1 Tablespoon soy free butter
  • 1/2 cup frozen peas
  • grated pecorino romano cheese
  • salt and pepper to taste

Instructions

  1. Salt water for pasta and place on high heat until boiling, then follow instructions for cooking pasta al dente on the box
  2. Sauté sausage in a skillet until cooked through
  3. Remove sausage and cut into bite-sized pieces
  4. In the same skillet used for cooking sausage, add white wine, butter, peas, and garlic.
  5. Toss sausage back into pan with wine and peas.
  6. Drain pasta and add with sausage and wine.
  7. Salt and pepper to taste
  8. Top with Pecorino romano and enjoy!
